I saw this picture of a bowl of lusciousness and realized now is the perfect time to make a bowl of Texas Caviar. Sweet corn is now available at local farm stands on the Illinois side of St. Louis and while this corn is perfect just the way it is, this might just be a great way to vary the corn while in season. Keller farms will begin selling their first picking tomorrow in Collinsville, Belleville and other metro east places.
Yum. Frankly you should be able to mix anything you want in with the corn, no need to follow what one recipe tells you to do. There are many Google images of Texas Caviar and just as many variations.
