I have a cookbook from the 1930's which I got from one of our former neighbors and while looking through it this week, I learned that somethings never change and others do in the cooking world.
This perfectly concise explanation for browning butter caught my eye. "Place a piece of butter in a hot frying pan and toss about until it browns." Not everyone browns butter anymore, but some of us in the family have a fantastic recipe for brown butter chocolate chip cookies which are so good you'll never go back to the traditional way of making them. So knowing how to brown butter is important and this lesson made me laugh with its brevity.
